India is a fascinating land known for its cultural heritage and traditional hospitality - a country with variety of cullinary delights the world has marvelled. We at the JEWEL OF INDIA have tried to trace the origin, adapt and prepare cuisines and regional delicacies that are today a part of every memorable feast. Pulao, naan, grilled kebabs, samoosas and the use of tandoor ovens were origins typical of the Uzbek cuisines. The cuisines is said to have found it's way to North India with Babur and his contemporaries. Over the years, the descendants who settled in India, refined and elaborated upon this cuisine, adding to it spices and adapting its local cooking methods to create what we now call Mughlal or Frontier Food. The Nawabi Kitchens of Avadh supported many chefs who were cullinary wizards. It is said Nawab Shuja ud Daula who maintained six kitchens himself had spent large sums of money on food. Cooks from Delhi were invited to Lucknow to produce and invent exotic delicacies. Truly, it is the Nawabs who set the standards of good feasting. Regional variations developed depending on availability of Ingredients and local influences. It is the Turkish influence, however, that caused a revolution in the Nawabi cuisine. Avadhi chefs created dishes which were marked for their subtlety, feasting rose to great heights of pomp presentation. Hyderabadi food runs parallel ot Nawabi cuisines of the North, a lot ot time being taken to prepare each dish. In both cuisines, dishes used to be adorned with dried fruits cut as flowers and with chandi ka warak. Meats were generally cooked over a slow fire, a process known as "Dum". Paans were eaten to digest rich and lavish meals. In tracing back the origin, we, at JEWEL OF INDIA try to revive and maintain these glorious cullinary traditions of old in an ambience best suited for today's world.
